Baked Eggs in Avocado

This breakfast is very simple but will feel extremely fancy! It is very quick to whip up. Add some toast and extra fruit on the side, and this is one delicious treat!

Ingredients:
1 large avocado
2 smaller sized eggs
Salt
Pepper
Crushed red pepper
Chives
Parsley

Instructions:
Preheat oven to 450F. Line a baking sheet with foil or parchement paper
Slice the avocado in half and remove the pit. With a spoon, carefully make the holes larger. Try to make them more wide and shallow rather than deep.
Crack an egg into a ramekin or small bowl before pouring into the avocado hole. Repeat with the second egg and other half of the avocado. Season the eggs and surrounding avocado with salt, pepper, and crushed red pepper.

Bake on the lines baking sheet for about 15 minutes until egg whites are set. Sprinkle with chopped chives and parsley

Smoked Salmon Avocado Toast

Avocado toast has become a bit of a joke in the recent years. However, it’s an incredibly easy dish to make and even easier to dress up for a highly nutritious and absolutely delicious meal! 

Ingredients:
2 slices of bread
1 ripe avocado
Fresh lemon juice
Cucumber
Red onion
Arugula
Smoked salmon
Any desired herbs or spices

Instructions:
Thinly slice the cucumber and red onion.  Wash and dry the arugula and set aside.
Scoop the avocado meat into a bowl and mash with a fork. Add in salt, pepper, and a squeeze of fresh lemon juice. Mix well and adjust seasonings to taste.
Toast your bread to your desired toastiness.
Spread the avocado mash onto the toast. Top with the smoked salmon, sliced cucumber, sliced red onion, and arugula. 
If desired, season with herbs and spices. Some ideas are:
Chives
Crushed red pepper
Fresh dill
Everything bagel seasoning
Hot sauce
Microgreens
Capers or olives
Good quality olive oil

Asparagus, Avocado and Snap Pea Pasta

This pasta dish is incredibly bright and full of green goodness!

Ingredients:
1 bunch asparagus, ends trimmed and cut into 2 inch lengths
1 package sugar snap peas
1 pound farfalle pasta or any desired pasta
4 tbsp butter
2 cloves garlic, minced
1 ripe avocado, pitted, halved, and cut into 1/2 inch chunks
1/2 cup fresh chopped basil
1/2 cup Parmesan cheese

Instructions:
Boil water in a large pot. Add the asparagus and cook until bright green. Then add the snap peas and cook for 30 seconds. With a slotted spoon or tongs, remove the vegetables and place aside in a bowl.
Return the water to a boil again and cook the farfalle until al dente, according to the package. Drain and reserve 1 cup of pasta water. Set the pasta aside.
In the same pot, melt 2 tbsp of the butter over medium heat. Add the asparagus, peas and garlic. Cook about two minutes, tossing often. Add the remaining butter, pasta, avocado, herbs, cheese, and the reserved pasta water. Combine well. Serve topped with additional cheese if desired, fresh cracked pepper, and extra fresh basil.
