This is an incredibly easy yet tasty toast recipe for a light lunch that is packed with nutrient-dense vegetables!
Ingredients
2 cups chopped fresh asparagus
1 teaspoon olive oil
4 oz goat cheese
4 tablespoons of any milk
2 teaspoons fresh dill
2 teaspoons fresh chives
1 cup shelled peas
4 slices of bread, sourdough or French
4 radishes, sliced
Salt and pepper
Instructions
Preheat the oven to 400 degrees, and line a baking sheet with parchment paper. Toss the asparagus in olive oil and roast for about six minutes
While roasting, make the goat cheese spread by stirring the cheese and milk until a spread is formed. Add the dill and chives.
Take out the asparagus and add the peas, roasting another two minutes. Then, assemble the toast! To the toasted bread, spread the cheese, and top with the roasted veggies and fresh radish.
Season with salt and pepper.
