Vegan Chicken and Dumplings

Sometimes we just need to kick back and relax with a bowl of comfort food…but you don’t need to feel guilty after with this yummy recipe!

Ingredients

1 medium onion, chopped

1 large carrot, sliced thin

2 gold potatoes, peeled and chopped

3 cloves of garlic, minced

6 cups veggie broth

1/3 cup frozen corn

1/3 cup frozen peas

Meat free chicken

Dumpling Ingredients:

1 cup all purpose flour

1 tablespoon nutritional yeast

1.5 tsp baking powder

.5 tsp salt

1/4 tsp pepper

1/2 cup dairy free milk

1 tbs canola oil

In a soup pot, add the broth, onion, garlic, carrots, and potatoes. Bring to a boil and cook uncovered for 10-15 minutes. Add the frozen corn and peas and cook until the potatoes are fork tender.

While the broth is cooking, make the dumplings. Mix the dry dumpling ingredients together, then slowly whisk in the milk and oil. The dough should be sticky. Set aside.

Add the meat free chicken to the pot and bring back to a boil. Begin dropping the dumplings into the soup using a spoon. The entire top of the soup should be covered in the dumplings. Cover, and cook for about 13 minutes, and try not to disturb the pot for about 10 minutes before checking. The dumplings are done when the middle is no longer doughy.
