Scallion pancakes are a traditional Chinese dish, often found at food vendors. Scallions are in season, so start your day with a bit of savory taste!
Ingredients
2 cups all purpose flour
1 tablespoon salt
3/4 cup boiling water
1/2 cup cold water
Vegetable oil as needed
1 bunch scallions, minced
Instructions
Mix the flour and 1 teaspoon of the salt in a large bowl. Pour in the boiling water and mix quickly. Now work the cold water slowly into the mix to form a dough. Knead for ten minutes, then cover with a damp cloth and let rest for forty minutes. Then, turn the dough onto a lightly floured surface. Divide it into four equal pieces.
Roll one piece of dough into a thin circle. Drizzle with vegetable oil, 1/2 teaspoon of salt, and 1/4 of the scallions. Slowly roll the round of dough into a tube. Working from one end of the tube, carefully coil the dough into a disc. Repeat with the rest of the dough and let rest for ten minutes.
Heat one tablespoon of vegetable oil in a skillet over medium-low heat. Roll out one of the coils into a thin round, and cook in the oil about 3 minutes per side.
Repeat with the next three coils.
