Sautéed Thyme Mushrooms


This juicy, tender, bright dish is bursting with herbaceous flavor and can be a perfect side to pasta, grilled meats, or made in a larger amount for a delicious and meaty plant-based main!

Ingredients:
16 ounces baby bella mushrooms
1/3 cup fresh thyme and oregano, chopped
3 tbsp olive oil or butter
2 tbsp fresh lemon juice
1/2 tsp kosher salt
Fresh ground pepper

Instructions:

Clean the mushrooms before slicing. Chop the herbs.
In a large skillet, heat the olive oil or butter over medium heat. Add the mushrooms, cooking for two minutes. The mushrooms will begin to release their liquid.
Add the herbs, salt, and pepper. Cook for about five more minutes. Stir often until most of the liquid is cooked away and the mushrooms are tender. 
Turn off the heat. Add the lemon juice. Stir, and taste for salt and pepper.
