This is a bit of a bread/cake hybrid that is meant to be enjoyed with tea!
Ingredients:
3/4 cup milk
1 tbsp fresh lavender, finely chopped
6 tbsp softened butter
1 cup white sugar
1 tsp lemon zest
2 eggs
1/4 cup Greek yogurt
1/2 tsp vanilla extract
2 cups all-purpose flour
1.5 tsp baking powder
5 tsp salt
Glaze:
2/3 cups powdered sugar
3 tsp lemon juice
1/2 tsp vanilla extract
Instructions:
Preheat oven to 325 degrees. Grease a 9×5 loaf pan.
Combine the milk and lavender in a small saucepan over medium heat. Bring to a simmer and remove from heat, allowing to cool slightly.
In a medium bowl, cream the butter and sugar until smooth. Beat in the eggs and lemon zest, then add the Greek yogurt and vanilla.
In a separate bowl, combine the flour, baking soda, and salt. Alternate adding the creamed mixture and the milk until just blended. Pour the batter into the prepared pan and bake for 45-50 minutes.
Prepare the glaze by combining the powdered sugar, lemon juice, and vanilla. Poke holes in the hot loaf with a fork and pour over. Cool completely on a wire rack.
