Soups are perfect as they are low in calories and fats and fulfill your sudden hunger while preventing you from overeating. By adding herbs, spices, and various vegetables, you create a delicious way to detox your body of harmful toxins.
When the weather is cold, nothing will keep you warm and comfortable like a bowl of healthy soup. Instead of drinking caffeinated beverages that can make your body dehydrated, a bowl of soup can nourish you and keep your body warm from the inside.

Immunity Soup
Serve this soup as hot as you can stand it for a full healing and immunity boosting experience!
Ingredients:
1 tbsp avocado oil
1 medium onion, very thinly sliced
3 celery stalks, very thinly sliced
1 medium carrot, very thinly sliced
8 cloves garlic, very thinly sliced
2 tbsp grated ginger
3/4 tsp finely ground white pepper
1 1/2 cups mushrooms, trimmed
8 ounces firm tofu, sliced into thin slabs
2 1/2 tsp fine grain sea salt
Chopped green onions
Instructions:
Heat the oil in a large soup pot over medium heat. Add the onion, celery, carrot, garlic, and ginger. Sauté until everything is just soft, being careful to avoid browning.
Stir in the white pepper and 10 cups of water. Bring the broth to a simmer and let simmer for 15 minutes Add the mushrooms, tofu, and salt, simmering for another 5 minutes. Stir well and taste for seasonings. Serve in bowls with lots of chopped green onions

Golden Soup
This beautiful golden soup is warm, creamy, and comforting while using minimal ingredients. It is like a hug in a bowl!
Ingredients:
2 tbsp olive oil
Half an onion, chopped
2 cloves garlic, minced
1 head cauliflower, chopped
1 cup cashews
1 tablespoon turmeric
7-8 cups water
2 tsp salt
Lemon juice
Instructions:
Heat the oil in a pot and add the onion, garlic, cauliflower, cashews, and turmeric. Sauté for about ten minutes.
Add the water and salt. Start with about 4 cups of water and add more as needed. Simmer until soft.
Blend. Use a big blender or an immersion blender to bring to a creamy consistency.
Return the soup to the pot and add any extra water. Season to taste, and add a dash of lemon juice. Enjoy!
Creamy Asparagus Soup
Paired with a light salad, this healing and nutrient-dense soup is perfect for a light meal
Ingredients:
1 tbsp avocado oil
1 chopped medium onion
1 clove garlic, minced
2 lbs asparagus, ends trimmed and cut into 1 inch pieces
15 ounce can of cannellini beans
4 cups vegetable broth
Salt and pepper to taste
Instructions:
In a soup pot, heat the oil and sauté the onion with a pinch of salt until translucent.
Add the garlic, asparagus and beans. Season with a small bit of salt and pepper and stir.
Add the veggie broth and bring everything to a boil.
Reduce to a simmer for 5 minutes, or until the asparagus is fork tender. Turn off the heat and let cool for a bit before using a regular blender or immersion blender. Blend until the soup is rich and creamy. Enjoy!
