- 2 tablespoons olive oil
- 1 large onion, diced
- 4 garlic cloves, minced
- 2 celery stalks, chopped
- 2 cups broccoli florets
- 2 cups fresh spinach
- 1 medium zucchini, chopped
- 1 thumb-sized piece of ginger, grated
- 1 teaspoon turmeric
- 4 cups vegetable broth or bone broth
- 1 cup fresh cilantro, chopped
- 1 lemon, juiced
- Sea salt and black pepper to taste
- Optional: 1/4 teaspoon red pepper flakes
- Heat olive oil in a large pot over medium heat. Add onions and cook until translucent (about 5 minutes).
- Add garlic, ginger, and turmeric. Cook for 1 minute until fragrant.
- Add celery, broccoli, and zucchini. Cook for 3-4 minutes, stirring occasionally.
- Pour in vegetable broth and bring to a simmer. Cook for 10-12 minutes until vegetables are tender but still bright green.
- Add spinach and cilantro, cook for another 2-3 minutes until spinach is wilted.
