The fruits in this light parfait are packed with vitamin C, help maintain healthy eye pressure, and aid in normalizing blood pressure.
Ingredients
2 small mandarin oranges, peeled and wedged
1 handful fresh blackberries
1 handful fresh strawberries
1 handful fresh blueberries
Granola
Greek yogurt, plain or vanilla
Instructions
Wash and dry the fruits thoroughly. Peel the oranges and separate into wedges.
In a bowl, pour the desired amount of granola and top with desired amount of Greek yogurt.
Place the fruits on top of the yogurt, and serve.
Enjoy!
Notes:
Use any yogurt you’d like! Silk makes a delicious dairy free option.
Sprinkle some powdered ginger or a bit of nutmeg on top.
Add more fruits if desired, but keep the focus on citrus and berries.
