Ingredients:
1 cup unsalted butter, softened
1 cup granulated sugar
1/2 cup brown sugar
2 large eggs
1 tsp vanilla extract
2 1/2 cups all-purpose flour
2 tsp ground cinnamon
1/2 tsp baking soda
1/4 tsp salt
For Cinnamon Sugar Coating:
1/4 cup granulated sugar
1 tsp ground cinnamon
Instructions:
Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
Cream the butter and sugars: In a large bowl, beat together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes). Beat in the eggs one at a time, followed by the vanilla extract. In a separate bowl, whisk together the flour, cinnamon, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until fully combined.
In a small bowl, mix together the 1/4 cup granulated sugar and 1 teaspoon cinnamon.
Scoop about 1 tablespoon of dough and roll into balls. Roll each dough ball in the cinnamon sugar mixture to coat. Place dough balls on the prepared baking sheets, about 2 inches apart. Bake for 10-12 minutes, or until the edges are golden. The centers should still be soft.
