This is a fast, easy, and delicious soup made with lots of garlic and very simple pantry ingredients for a warm and filling meal!
Ingredients:
1 tbsp olive oi
3 – 4 large garlic cloves, minced or pressed
1 tsp paprika
1 tsp dried rosemary
1/2 tsp dried thyme
1/4 tsp dried chili flakes
2 can chickpeas
1 large potato, diced
2 cups vegetable broth
Salt and pepper to taste
Instructions:
Pour one can of chickpeas into a blender with the liquid and blend until smooth.
Heat the olive oil in a pot over medium heat. Add the garlic and cook for about one minute, until fragrant.
Add the pureed chickpeas, the second can of drained chickpeas, potato, and spices. Stir, then add the broth and stir again.
Put on the lid and turn the heat to medium-high until boiling. Once boiling, lower the heat and simmer for 25 minutes.
Taste the soup and adjust for seasoning. Serve with fresh ground pepper and a drizzle of olive oil.
