Carrots are loaded with beta-carotene and helps the retina function correctly. Red bell pepper protects against cataracts and helps the blood vessels in the eye.
Ingredients
3 carrots
1 raw red bell pepper
5 radishes
Green onions
Olive oil
Lemon juice
Salt and pepper
Instructions
Wash and dry the carrots, bell pepper, radishes and green onions. Peel the outer layer of the carrots, then use the peeler to create long thin strips.
Slice the bell pepper and radishes.
Mix together in a bowl. Chop the green onions and sprinkle on top.
Drizzle with olive oil, lemon juice, and sprinkle with salt and pepper to taste.

Add any extra vegetables you’d like! Sliced avocado would also be a great addition.
