This is a fairly simple and delicious salad that will lighten up the heavy holiday dinners!
Ingredients
1 lemon
4 smashed garlic cloves
1/4 tsp red pepper flakes
1/2 cup extra virgin olive oil
2 cans white beans, such as cannelini
1.5 tsp kosher salt
1/4 cup raw pistachios
1 head radicchio, sliced thin
1/2 cup chopped fresh dill
8 oz. feta cheese
Instructions
Zest the lemon in wide strips, avoiding the pith. Juice the lemon and remove seeds.
Heat the oil, lemon zest, garlic, and red pepper flakes on low heat. Break apart the garlic while stirring.
Remove the pan from the heat and stir in the beans, lemon juice and salt. Season with black pepper, and toss.
While the mixture is sitting, toast the pistachios in a dry pan over medium heat until golden brown. Roughly chop.
Add the mixture, the radiccio and 1/4 cup of dill in a large bowl. Crumble in the feta and toss to combine.
Serve topped with pistachios and dill.
