Ingredients
One teaspoon olive oil
One small onion, diced
Eight ounces cremini mushrooms, sliced
Eight ounces shittake mushrooms, sliced
Two teaspoons soy sauce
One teaspoon mirin
Three cups mushroom or beef broth
Two cups water
One teaspoon salt
Two carrots, sliced very thin
Two cups white beans, such as cannellini
Two cups chopped kale
Black pepper to taste
Instructions
Heat the oil in a soup pot. Add the onion and cook until soft, then add the garlic and cook for about a minute. Add the mushrooms and cook until the moisture begins to evaporate. Add the soy sauce and mirin, mixing well to combine.
Add the broth, water, carrots, and salt. Bring to a boil then lower to a simmer. Add the beans and kale, stirring well. Once fully warm, taste for seasoning and adjust as needed. Serve seasoned with black pepper.
