Following the parameters of the MIND (Mediterranean-DASH Intervention for Neurodegenerative Delay) diet, I have created this delicious recipe that is full of vitamins and minerals that help fight Alzheimer’s and dementia.
Ingredients
Two handfulls fresh kale, chopped
One handfull fresh spinach
One carrot, jullienned
One half red bell pepper, chopped
Fresh caught baked salmon, seasoned as desired
One half cup garbanzo beans, drained
One half cup chopped walnuts
Olive oil and balsamic vinegar for drizzling
Instructions
Heat the oven to 400 degrees Farenheit. Place the fresh salmin in a baking dish and season as desired. Bake the salmon at 44 for approximately 15 minutes, or until the salmon flakes easily.
Wash and dry the greens. Remove the stems of the kale and roughly chop the leaves. Toss together with the fresh spinach.
Toss in the jullienned carrots, chopped bell pepper, garbanzo beans, and walnuts.
Lay the baked salmon on top, either whole or sliced. Drizzle with a bit of olive oil and balsamic vinegar.

Optional: Garnish with fresh dill and/or sliced avocado.
