Lemon Thyme Chicken


The flavors of this pasta dish come together in one skillet for a quick and tasty weeknight dish!

Ingredients:
1 tbsp olive oil
4 boneless skinless chicken breasts
1 tsp minced garlic
1 tbsp lemon juice
1 tsp salt
1/2 tsp pepper
1 tbsp butter
1 tsp flour
1.5 cups milk
1/2 tsp lemon zest
1/2 tsp dried thyme or 1 tsp fresh thyme

Instructions:

Rub the chicken with garlic, lemon juice, 1/2 tsp salt and pepper. Let sit for 15 minutes.
Heat olive oil in a large skillet. Add the chicken, cooking on each side for 5-6 minutes or until cooked through. Set chicken aside on a covered plate.
In the ssme skillet, heat the butter and add the flour. Stir flour for a minute and slowly whisk in the milk until incorporated.
Simmer the sauce while stirring until the sauce thickens. Add the remaining salt, lemon zest, and thyme. Mix and add the chicken back to the pan, simmering for two more minutes.
