Cilantro Lime Chicken

This easy dish is a fun and bright way to celebrate summer and cilantro! Serve with any desired side dishes for an easy and delicious meal. 

Ingredients:

2 tbsp olive oil
4 cloves garlic, minced
1/2 tsp cumin
1/2 tsp salt
Fresh cracked pepper
2 limes, sliced into wedges
1/2 bunch cilantro
6 boneless, skinless chicken thighs

Instructions:

Combine the olive oil, minced garlic, cumin, salt, and some pepper in a small bowl. Zest one of the limes and squeeze the juice in with the spices. Roughly chops the cilantro and add half to the marinade. Stir. 
Place the chicken thighs in a shallow pan or in a ziploc bag with the marinade and toss to coat. Marinate for 30 minutes or up to 8 hours in the fridge. 
When ready to cook, heat a large skillet over medium-high heat. Add the chicken once hot and cook 5-7 minutes each side. Add extra marinade as needed. 
Top the chicken with more fresh cilantro if desired, and lime wedges.
