Tomato and Avocado Toasted Sandwiches

A toasted sandwich can act like a perfect, warming hug. This healthy comforting recipe is sure to wrap your heart in a delicious blanket.

Ingredients

2 tomatoes, sliced

Olive oil

Oregano

1/4 cup mayo (use vegan if plant based)

1/2 cup lemon juice

1 clove garlic, diced

Butter (use vegan if plant based)

2 slices of bread of choice

1 large avocado

Basil and arugula

Instructions

Line a baking sheet with parchment paper and preheat the oven to 350. Line up the tomatoes on the baking sheet and drizzle with the olive oil, salt and pepper. Bake for 15 minutes or until the tomatoes are tender.

Mix the mayo, lemon juice, galic, and a bit of salt and pepper to taste. Keep in the fridge until ready to use.

Toast the bread by spreading the butter on one side of each slice and cooking in a pan, butter side down, until browned to your liking.

Spread the mayo aioli on both sides of the toast. Layer the tomato, avoacdo, oregano, basil, and arugula.
